Acorn Squash in Tumeric and Shalott and Mushrooms

Ingredients:Acorn squash washed and cut in about 2" by 1"
1/3 tsp Tumeric powder
1/3 salt or more if you like
2 tblsp cooking oil
1 or 2 small Shalott peeled and sliced thinly
1/2 cup water

Instruction:

Heat oil in wok or a pan
Add Shalott- cook till light brown
Add the squash. and salt.Stir
Add water. Stir. Close lid.
Stir occationally till done.


As for the mushrooms:

Put as much sliced mushrooms as you like in a skillet. Close lid and cook in mediumheat. It will produce it's own water  and cook. Stir occasionally. Add salt and herb to your liking. Enjoy!

Note:

These two side dishes go very well with steak on the grill. 

We like to eat them with grilled beef filet.

Sometimes,
I add corn strach diluded in cold water to the mushrooms
turing it into a mushroom sauce to pour over stake.








Artic Char - and simple sauce

Recently accidentally...

 I discover this fish called Artic Char at my favorite Seafood shop in Sarasota caleed 

"Lotsa Lobster" the fish looks like Salmon but much smaller in size but tasted amost like a trout. 

It tasted mot devine both my husband Will and I thought. 

So, feel free to try my simple and fresh recipe...

Ingredietns:

3 lbs or so or a filet washed in cold wate
1 baking dish (shallow ones are better)

For sauce:
1/2 cup soy sauce
1 tblsp sesame oil or less
1 tblsp rice vineger
1 pinch of ginger powder or some fresh ones
3 green onions (cut and soaked in water for 10 minutes)
(mix them all in a bowl). Set aside


Instruction:

Oil the bottom of the baking dish
Place the fish- skin side down
Roast or bake at 350 degree for one hour

Place the fish in serving platter.
Pour the mixture
Serve
