Chicken and Sausage Gumbo

Ingredients:
1/3 cup white flour
1/3 cup cooking oil
2 Cups chopped onion
2 cups chopped celery
2 cups chopped green and red bell peppers
1 whole chicken (boiled in 10 cups water for 90 minutes)
1 pound andouie sausage.
2 cups wate

Instruction:
  • Make a Roux by cooking the flour in oil stirring constantly till it is lightly brown.  Do not burn it.
  • Add onion to the pot, stir for 1 minute 
  • Add celery and pepper and tomato, stir
  • Add 2 cups water and cook the vegetables
  • Add Cajan seasoning 
  • Add meat of chicken without bone and boroth
  • Add sausage
  • Bring it to a boil & cook till vegetables are soft 
  • Add more seasoning if needed.
