Young Squash Leaves soup/ Maian Bai


Ingredients
  • 10-15 Young squash or pumpkin leaves, deveined , washed and cut by hand
  • 3 Cups water
  • A pinch of baking soda
  • A large wooden or Bamboo spoon
  • Salt if desired
Note: If you desire to put other vegetables such as a Zucchini  Eggplant, geen chili, put them in pot when the water is still cold.
Instruction
  • Bring water to a boil in a deep and not so large pot
  • Add the squash or pumpkin leaves
  • DO NOT STIR
  • Press the leaves dawn with spoon to make sure they are sunk in the water
  • Add baking soda, it will bubble and rise up
  • Press the leaves down again , and a gain
  • Stir gently till the leaves are soft and still green.
  • Add salt if desired.  Serve hot or warm.
