Simple Acorn Squash



Both my parents loved this dish and we ate it quite often at home.  I carry on the tradition and make this dish often even now.  Fortunately my husband Will loves it too


Ingredients
  • 1 Acorn squash ( the greener the better)
  • 3 Tablespoons cooking oil
  • 1/2 Cup water
  • 1/2 Teaspoon Turmeric powder
  • 1 Shallot or small onion- thinly sliced
  • Salt to taste
Instruction
  • Cut the squash in bite size
  •   Heat oil in a pan
  • Add onion slices - cook for 2 minutes
  • Add Turmeric powder and squash, stir
  • Add water and salt. Close lid - lower heat
  • Check and stir gently often till done.
