Both my parents loved this dish and we ate it quite often at home. I carry on the tradition and make this dish often even now. Fortunately my husband Will loves it too
Ingredients
- 1 Acorn squash ( the greener the better)
- 3 Tablespoons cooking oil
- 1/2 Cup water
- 1/2 Teaspoon Turmeric powder
- 1 Shallot or small onion- thinly sliced
- Salt to taste
Instruction
- Cut the squash in bite size
- Heat oil in a pan
- Add onion slices - cook for 2 minutes
- Add Turmeric powder and squash, stir
- Add water and salt. Close lid - lower heat
- Check and stir gently often till done.
