Brocolini
Ingredients:
Brocolini
5 cups water
Direction:
Clean Brocolini in cold water
Boil water in a big pot
Add Brocolini and cok for 2 minted.
Bring it out of the hot water and place it in a platter.
Eat it with vinegar or a sauce
Sauce:
1/2 cup soysauce
1/2 cup water
1 tsp sesame oil
1 Tbsp sesame oil
Mix it all together and pour it over Brocolini.
Curried Beans
Ingredients:
6 cups cooked beans of any kind. In this I used blackeyed peas and white beans
1 tbsp curry powder
1/2 tsp salt (use more if you like it saltier
2 cups water
Direction:
Drain beans in colander till the water ran clear
Boil 2 cups water in a pot
add all the rest ot the ingredients
bring it to a boil for 3 minutes. Stir.
Serve.
You may add lemon juice and chilli powder to this dish.
What to do with Leftover roasted pork?
Life is very interesting. There are the two of us in the house and Will is a vegetarian now and I still eat meat. So, I made pork roast the other night. It was good but then there was leftover. I don't like to eat leftover any thing. So, I tore it into small pieces and pan fried it with fresh Rosemary from my friend Juday Armitage's garden. I thank God for good friends like Judy. I thank God for the intelegence he gave me to turn an old leftover food into a whole new dish the next day.
2 cups Leftover pork (shredded) this can be chicken or beef
2 tbsp cooking oil
5 springs fresh rosemary
1/4 tsp salt
Instruction:
head oil in skillet
add shreded meat and salt and rosemary
cook it in hi heat for 2 minutes
continue to cook it in medium heat for 5 more minutes stiring frequently.
Omelete with onion and tomatoes
This is my breakfast today. I really dislike eating breakfast in the morning but I am learning to eat breakfast out of necessity.
Our devotion this morning was Psalm 145 and I especially like verse 17 which reads " the Lord is just in all His ways and kind in all his doings". I love this verse as I enjoyed eating this breakfast I felt the kindness of the Lord. Why else would I enjoy eating this early?

Ingredients:
2 whole eggs
1 egg white
1 small onion (sliced thinly) or as much onion as you like
1 small tomato (chopped or diced)
2 tblsp canola oil/any cooking oil but not Olive oil
Instruction:
Miss all ingredients minus oil in a bowl
heat oil in a skillet
add the egg mixture
flip it after 2 minutes
cook till the doness of your liking
Serve. Add salt as you eat.

Rosemary Roasted Pork
Ingredients:
3 pounds pork with ribs
2 tblsp olive oil
1/2 tsp salt
4 sprigs fresh rosemary
2 small onions ( peeled and cut in half)
1 head garlic cut across
4" long fresh Ginger root ( cut in 1/4 thickness)
Instruction:
Place pork in heavy baking dish
Rub salt all over pork and place it in the middle of the baking dish
Springcle salt and olive all over. Springkle reosemary on pork.
Bake at 350 degrees for 90 mites.

Myanmar Red Curried Shrimp
- 2 pounds of jumbo Shrimp peeled, tale off and deveined (the larger the shrimp the better)
- 1/2 Teaspoon Turmeric powder
- 1 Cup finely chopped up onion
- 4 Cloves Garlic smashed and finely chopped
- cup thinly sliced Roma tomatoes
- 1 Teaspoon paprika and salt
- 2 Table spoon of cooking oil
- 1/3 cooing oil (not olive oil)
Instruction
- Heat oil in a wok or a big Sauce pan
- Add Onion, cook they are soft
- Add garlic, stir,
- Add Turmeric powder and paprika, stir
- Add Tomatoes, cook till the skin is comes off
- To that add Shrimp and slat
- Cook till Shrimp is done
- Garnish with something green
Joshua’s Broiled Salmon
Ingredients
- 3.5 - 4 Pound Salmon filet (wild caught king Salmon tastes best for this dish)
- 1 stick or 8 tablespoon of butter - melted
- 1 Tablespoon cracked pepper
- Juice of one big Lemon
Instruction
- Wash Salmon in cold water
- Place them on a shallow baking dish
- Pour Lemon Juice all over Salmon
- Pour melted butter all over Salmon
- Sprinkle cracked pepper all over Salmon
- Broiled
- for 18 minutes per inch thickness
or
- Till desired doneness
Alena’s Tempura Shrimp
Ingredients
- 4 pounds of Jumbo Shrimp, peeled and deveined, tail on
- A box of Tempura mix any brand
- Follow the box and make Tempura batter
- 4 cups of Canola oil
Instruction
- Wash Shrimp in iced cold water
- Pip one at a time into the Tempura batter mix
- Fry 5 or 6 at a time in a really well heated oil
- Fry for 5 minutes or till the tail of Shrimp is red
Fried Salmon in Roselle/Chin bong leaves
- 3 Steaks of Salmon marinated in salt/pepper and deep fired, set aside.
- 6 Cups Chin Bong leaves, washed and drained
- 1 Cup dried small shrimp, soaked in cold water
- 4 Tablespoons crushed red dried pepper
- 1 Small onion, sliced thinly as possible
- 5 Cloves garlic, crushed and chopped
- 1/3 Cup cooking oil ( I use canola oil)
- 2 Tablespoons fish sauce or 1/2 teaspoon salt
- 6 Dried long red pepper
- 1 Teaspoon Turmeric powder
Instruction
- Mix dried shrimp, crushed red pepper, onion and garlic in a blender or food processor lightly
- Heat oil in a wok or skillet
- Put the mixture in the oil, stir for 7 or 8 times
- Add Turmeric powder and whole chillies, sitr
- Add the leaves and fish sauce, stir
- Add 2 cups water and cook till leaves are soft
- Put Salmon pieces gently on the leaves
- Bring it to a boil, and serve.
Yellow Squash And Onion
- 4 Cups yellow squash sliced
- 4 Cups sliced large onion
- 2 Table spoon cooking oil
- 1/2 Cup graded aged cheese of your choice
- Salt and black pepper to taste
- 1/2 Seasoned bread crumbs
Instruction
- Heat oil in a skillet
- Add onions cook for 1 minute
- Add squash cook till they are soft and done
- Add salt and pepper to your liking
- Put bread crumbs in the empty baking dish
- Transfer quash and onions into baking dish
- Sprinkle cheese over squash
- Broil till cheese melted and turn brown
- Serve it hot or warm
Fried Roselle/Chin bong leaves
Ingredients
- 6 Cups Chin Bong leaves, washed and drained
- 1 Cup dried small shrimp, soaked in cold water
- 4 Tablespoons crushed red dried pepper
- 1 Small onion, sliced thinly as possible
- 5 Cloves garlic, crushed and chopped
- 1/3 Cup cooking oil ( I use canola oil)
- 2 Tablespoons fish sauce or 1/2 teaspoon salt

Healthy Chinese Broccoli
- 5 Stems of Chinese Broccoli, washed and cut
- 1 Small Onion, sliced
- 2 Cloves Garlic, sliced
- 1 Tablespoon cooking oil
- 1 Teaspoon corn starch, dissolved in 1/3 cup cold water
- 1/3 Teaspoon salt
- 1/2 Cups cold water
Instruction
- Heat oil add Garlic, cook it till light brown
- Add the stem parts of the Broccoli
- Add salt and 1/4 cup water, close lid
- 1 or two minutes later, stir
- Add the rest of the Broccoli, Stir
- Add the rest of the water, close lid
- A minute or so stir, close lid
- When Broccoli is done add corn starch water.
- Stir. Remove from heat. Serve.
Quickly Stir fried vegetables
Ingredients
- 2 Stalks Salary with the leaves-sliced thinly
- 16 oz Bean sprouts
- 1 Carrot cut in small long strips
- 1 Regular size onion-sliced thick
- 1 Tablespoon cooking oil
- 1/2 Cup cold water
- Salt
Instruction
- Heat cooking pan very hot and add oil
- Add onion and Carrot, stir about 9 times
- Add water, stir
- Add Salary, stir till it is done to your liking
- Add bean sprouts Stir
- Add salt
- Stir some more and remove pan from fire
- Serve strait away!
Cabbage and Carrots
- Half a Cabbage, sliced in long slices( see picture)
- 1 Carrot, slice thin diagonally
- 1 Shallot, sliced
- 1/2 Teaspoon ground black pepper or more
- 1/2 Teaspoon salt or more if desired
- 2 Tablespoons cooking oil
- 1/3 Cup water
Instruction
- Heat oil in a wok or deep skillet
- Add Shallot and Carrot and some salt
- 2 minutes later
- Add Cabbage, stir throughly
- Add water, stir
- Close lid to steam cook them for 2 minutes
- Check, stir, till desired doneness of Cabbage
- Add pepper and salt.
Fried Green Tomatoes
Ingredients
- 3 or 4 Very very green Tomatoes
- 1 Batter made for fried Green Tomatoes
or make you own by mixing the following
- 1 Cup flour
- 1 Teaspoon sea salt
- 1 Teaspoon blacker
- 1/2 cup Cold water ( or more as needed)
- 3 Cups Canola Oil
Instruction
- Wash tomatoes and dry them
- Cut them in 1/4 thickness
- Mix the batter in cold water
- More water for thin coating
- Less water for thinker coating
- Heat oil and fry them till golden brown
- Serve it hot with any sauce
String Beans with Garlic
Ingredients
- 1 Pound String beans, trim both ends and washed
- 1 Small Shallot or 2 cloves garlic, sliced thinly lengthwise
- 1 Table spoon cooking oil ( olive oil is best)
- 1 Tablespoon flat leaves Parsley
- Pinch of salt
- 3 Tablespoons cold water
Instruction
- Heat oil in a frying pan
- Add Shallot or Garlic - stir
- Add String Beans, stir
- Add Salt and stir
- Add water stir, lower heat, add parsley
- Close lid and let it steam cook
- Open lid after a while, stir
- Repeat the process till desired doneness
Stir fried Sugar Snap peas and Carrots
Ingredients
- 2 Cup carrots - sliced diagonally
- 1 Snow peas trimmed on both ends
- A pinch of salt
- A pinch of ground black pepper
- 1 Small shallot - sliced
- 1 Clove garlic (optional)
- 2 Small slices of ginger (optional)
- 1 Teaspoon cooking oil
Instruction
- Heat oil in a wok or shallow pan
- Add shallot cook it till they are wilted
- Add garlic and ginger (if you choose)
- Add carrots and 3 tablespoon water
- Stir and close lid, reduce heat
- When Carrots are cooked add snow peas
- Add salt and pepper stir for a minute or so
- Serve immediately.
note: you can also add any other kinds of vegetables in this dish..
to this dish.
Simplified Korean Chabjae
To me This dish is like life in general, variety of colours, tastes, textures, and shapes of vegetables, noodles and meat not to mention oils and seasonings all in one bowl.
It also takes time to make it. So, patience is a part of the recipe.
Like life, it is flavourful and delicious. Enjoy! Ingredients
- 1 pound port tenderloin, cut in very thin strips
- 4 cups cooked bean threads or glass noodles
- 1 large onion, cut in bite size
- 2 tablespoon cooking/vegetable oil
- 3 table spoon sesame oil
- 1 cup each of sliced Zucchini & mushrooms
- 1 cup asparagus, cut in 2” pieces
- 1/2 cup carrot, cut in small strips
- 3 table spoon fresh Garlic, smashed
- Korean Soya Sauce
- Plenty of patience and time
Instruction
- Cook bean threads in boiling water,
- Drain, wash in cold water - set a side
- Have a very large bowl near by
- put a little bit of oil in skillet and cook
- One kind of vegetable at a time
- put the cooked vegetables in the large bowl
- When all vegetables are cooked
- add noodles into the bowl
- Pour sesame oil and mix them well
- Add soy Sauce till desired saltiness
- Enjoy!
Elizabeth’s Singaporean laksa
- 1 packets of Singapore Laksa curry paste
- 1 teaspoon chili paste
- 1 large (15 oz) can coconut milk
- 16 oz beans sprouts, blanched in hot water
- 8 fish balls
- 10 large shrimp, peeled, deveined tail on
- 3 hard boiled eggs
- 1 cup water
- Thin rice noodles, cooked by boiling in water
Instruction
- Dissolve Laksa paste in 4 cups of water
- And boil in a large pot
- Add coconut milk, and paprika powder
- Add fish balls and shrimp at last
How to serve this:
- In a bowl put some cooked rice noodles
- Put some beans sprouts
- Put a quarter of hard boiled egg
- Pour very hot soup (you have made) over it.
- Enjoy - add salt in your bowl if needed
Avocado Salad, My Version
- 1 Large perfectly ripe Avocado
- 1 Roma Tomato
- 1 Fresh lime, use only the juice of it
- 1 Pinch of sea salt or regular salt
- 1 Pinch ground pepper or more if you wish
- Fresh Mint leaves
Instruction
- Slice Avocado and Tomato
- Arrange them on a plate
- Place Mint leave wherever you wish
- Cut Lime crosswise and squeeze juice over
- Avocado and tomatoes
- Grind salt over all of it.
- Sprinkle black pepper
DO NOT FORGET TO EAT THE MINT LEAVES
Caesar Salad with Broiled Salmon
Ingredients
- 2 Salmon Stakes ( 1” thickness)
- Any kind of sweet meat rub
- A head of Romain Lettuce
- Caesar Salad dressing
- Parmesan cheese
Instruction
- Grill the Salmon with the sweet rub
- Broil Salmon for 18 minutes
- While Salmon is being broiled
- Clean and cut the Lettuce into bite size
- Place them in a large bowl
- Toss with your favorite Caesar dressing
- Place the salad and fish on top of it
- Add cheese all over.
